Forget regular puri—this version uses tomatoes as the base and coats them in a crispy besan layer!  It’s juicy inside, crunchy outside, and packed with street-style flavors. A total game-changer snack you’ll want to try instantly.

Take firm, medium-sized tomatoes and cut them into thick round slices. Gently scoop out a little pulp from the center to create space. Prepare a thick batter using besan (gram flour), salt, red chilli powder, turmeric, and a pinch of baking soda. Add water to make a smooth coating batter.

Dip each tomato slice into the batter, ensuring it’s well coated. Deep fry in hot oil until golden and crispy from outside. Remove and let them cool slightly. Now fill the hollow center with finely chopped onions, a bit of boiled potato (optional), and drizzle green chutney and tamarind chutney. Sprinkle chaat masala, sev, and fresh coriander on top.

Serve immediately while hot and crispy.

The crunchy besan layer with juicy tomato and tangy toppings creates an explosion of flavors in every bite!
