Aloo Katori Chaat is a perfect fusion of crunchy, creamy and tangy flavours. The crispy potato baskets act as an edible bowl filled with delicious toppings — making it a perfect party snack or evening treat.

Ingredients   🥔 Grated potatoes 4 medium  🌽 Corn flour 3 tbsp  🧂 Salt as per taste  🛢️ Oil for deep frying  🥔 Soft aloo tikki or dahi vada 6 pieces  🥣 Fresh yogurt 1 cup  🌶️ Chaat masala 1 tsp  🌰 Roasted cumin powder 1 tsp  🌱 Sprouts ½ cup  🧅 Finely chopped onion 1 small  🌿 Green chutney 3 tbsp  🍯 Tamarind chutney 3 tbsp

Method   1️⃣ First soak the grated potatoes in cold water for 2–3 minutes to remove excess starch.  2️⃣ Now squeeze them well and make sure they are completely dry.  3️⃣ Add corn flour and a little salt then mix everything nicely to form a light binding.

4️⃣ To make crispy katori shapes dip a strainer in hot oil and press the grated potatoes on it then deep fry on medium flame until golden and crunchy.  5️⃣ ⭐ Today I fried these crispy aloo katoris in Kalasians beautiful brass cookware which is completely safe with proper tin lining and provides even heating.  6️⃣ In traditional kitchens brass cookware is also preferred for digestion support and with basic cleaning and occasional re-lining it lasts for years maintaining premium quality.

7️⃣ Once all katoris are ready place soft aloo tikki or dahi vada inside and top with creamy yogurt, chaat masala and roasted cumin powder.   8️⃣ Finally add crunchy sprouts, fresh onions, green chutney and sweet tangy tamarind chutney then serve immediately.
